The general method involves enzymatic hydrolysis of corn protein to obtain corn active peptides. In actual production, corn protein is often present in the form of corn gluten meal (CGM). Corn protein can be divided into four types based on solubility: alcohol-soluble proteins, glutenins, globulins, and albumins, with alcohol-soluble proteins being the most abundant, approximately 40%. Within alcohol-soluble proteins, α-zein is the main type, comprising 75%-85%.
Typically, corn gluten meal is used directly as the substrate for hydrolysis, although α-zein may be used to achieve higher purity or specific sequences. Various proteases are used for hydrolysis, with alkaline proteases being the most common, such as Alcalase and Bacillus subtilis alkaline protease. In studies on preparing antihypertensive peptides, thermostable proteases have also shown excellent results.
